Armed with board, flour and water, we will make together with our guests Orecchiette, a typical Apulian pasta shape. We will cook them following the traditional recipes, with fresh scattarisciati tomatoes or with cime di rapa (turnip greens), depending on the season. Extra virgin olive oil tasting in the olive garden
Learn about olive oil tasting in the charming setting of our olive grove. We meet early in the afternoon at the family olive grove, Cantasole. When we arrive, we will have a walk with Max and Bruno (our welcoming dogs) to discover the history and the hidden corners of our farm. During our walk we will come into contact with olive trees of 200 years old as well as 4 years old trees and learn all the characteristics of olive trees cultivation. From tree to the table, we will have a practical lesson under the shade of an ancient olive tree and learn the basics of olive oil tasting to discover the organoleptic qualities of 3 different olive oils, how to recognize defects and attributes. To end of our experience, we will share a glass of wine (or fresh juice) with some typical dishes from Salento. You will enjoy an immersion into the shades of our land with simple and tasteful ingredients. The best is always to spend some time together at sunset with a breeze of the end of a hot day. At the farm, it’s possible to buy our extra virgin olive oil and all the related products we will try together during the experience. We also ship everywhere in Europe. The secret of Perfect Pasta
If you love to eat and cook come and join me in the SudKitchen Laboratory. In a professional but informal atmosphere I will personally guide you to discover the secrets of the perfect pasta dish. I will teach you how to make many types of homemade pasta in a real kitchen workshop. We will make dough with egg, semolina and water and colored dough with vegetables. You will learn the cutting techniques and we will make sauces to accompany our pastas. At the end of the experience we will cook all the pasta and sauces made during the lesson and we will eat them with excellent wine and a selection of typical cold cuts and cheeses, artisanal and organic.
Let's make together the typical pasta from Salento!
***Contact me to arrange a cooking class even if you don't see dates open*** We will make together the dough for pasta with flour and water, trying to realize different traditional shapes of Salento's pasta: sagne torte, orecchiette and minchiareddhi. Once made our pasta you'll have the chance to join an Italian style meal, we will taste it together with the traditional tomato sauce (sugo) with fresh goat cheese or with spicy cheese (ricotta forte) and with a seasonal sauce such as turnip, fresh tomatoes, seasonal pesto or much more. Before tasting our pasta we will enjoy an appetizer with local cheeses coming from farms around Lecce and seasonal veggies, drinking complimentary rosé wine from a local farm. La "Cooking class with Livio" nasce dall'amore per la cucina italiana e per il Salento, terra in cui sono nato e cresciuto. Mi diverte molto l'idea di fare conoscere alla gente le basi della cucina salentina, fare vedere passo dopo passo come nasce la pasta fresca. La mia esperienza infatti, è un full immersion di una durata di quattro ore nell'arte dell'impastare. Scoprirai stupendoti che bastano veramente pochi ingredienti, di uso quotidiano tra l'altro, per realizzare la tipica pasta leccese. Divertimento è la parola chiave della "cooking class with Livio", inteso come curiosità nella scoperta di questa arte. Ti guiderò in maniera pratica nella realizzazione della pasta fresca e con amore per la mia terra vi racconterò qualche aneddoto e curiosità sull'importanza di questa arte per noi leccesi. Lecce Street food and sightseeing tour
After meeting, we will start our walking between the alleys of the old city centre headed to our first tasting of salami and wine. I will tell you the history related to the main highlights such as Basilica of Santa Croce or piazza Duomo and many places that we will find on the way. From one place to the other we will stop to some shops to delight your palate with the most famous samples of Salento street food such as the "rustico": a soft puff pastry disc filled with mozzarella, tomato and béchamel, or the "frisella": a twice-baked bread roll topped with fresh tomato and olive oil . The tour will take place at dinner time, as it is an ideal way to do some sightseeing while having a light meal like locals use to do. Rich tasting of Salento's wines
We will meet in the room that I have personally chosen for this event. Here 6 bottles of wine will be served, 1 or 2 of white wine, 2 of rosé and 2 of red, produced from typical local grapes such as Negroamaro, Primitivo il Fiano and Verdeca, accompanied by a selection of typical gastronomic products of Salento such as olives, Pizzi, Pucce, Frize, Rustici, and fresh cheeses such as mozzarella and burrata. For each label tasted I will tell you the history of the wine and of the producing cellar, telling you about the production techniques and the history of the terroirs related to the selected wines and I will tell you the history and traditions related to Salento. Other things to note You will be welcomed in a typical and reserved environment where you will find a service dedicated exclusively to you. Street Food Tasting and Walking Tour
I will take my guests on a street food tasting tour, using the new "pay what you eat" formula. There will be a mix of city sightseeing and tasting of local food. Customers will choose what and how much to eat and drink, and they will pay directly for their choices. This is very good especially for couples, families and groups, so they can have more tastings and save money! At the beginning of the tour I will enquire their expectations, to seize the tour on their preferences. The tour will start at Porta San Biagio, one of the main ancient doors of old town. Then we will move towards piazza Duomo and on the way guests will have their first tasting of "frisella": a twice-baked bread roll topped with fresh tomato and olive oil. Walking through the off-the-beaten paths we will reach Porta Napoli, the second main portal of old town . It's time then for another food tasting, the "rustico": soft puff pastry disc filled with mozzarella, tomato and béchamel. Next we will get to Santa Croce Basilica, the emblem of Lecce Barocco style with its richly decorated facade. It's time to taste a delicious "Pasticciotto", the king of Salento pastries! At the pace of a relaxing walk we will reach the city centre, Piazza Sant'Oronzo, with Anfiteatro Romano, the Sedile, the column hosting the statue of the Saint and other interesting details.

Together with me you will be able to see the best landscapes, the secret and hidden places that only a local expert can offer you.
