One by One Homemade orecchiette
Armed with board, flour and water, we will make together with our guests Orecchiette, a typical Apulian pasta shape. We will cook them following the traditional recipes, with fresh scattarisciati tomatoes or with cime di rapa (turnip greens), depending on the season. In addition to ‘’our orecchiette’’, we will taste a typical Salento menu consisting of tarallini, frise, cheese, mozzarella, legumes and vegetables that we could also have the chance to harvest from our home’s garden, depending on availability. There will also be a good bottle of Salento wine on the table and the liqueur made with laurel leaves collected from the great hedge of grandparents’ house.
Narrations and explanations on the history and traditions of Salento will accompany the culinary experience.

My mother-in-law, Grandma Tetta makes home-made pasta since she remembers it: orecchiette, minchiareddhi, tria, sagne 'cannulate, with love and dedication unchanged over time. Certainly her hands work better than mine and he especially likes to explain this wonderful art to young and old people! You will learn how to made the orecchiette with grandma Tetta a.. a woman of the past, I recommend do not make her angry! Then after the workshop we we ll go on terrace for a tipicalsalentine dinner: from antipasto to sweets, with two kind of pasta: sagne ncannulate e orecchiette.

Discovering Lecce, city of Baroque art!
We will take a 2-hour tour through the streets and alleys of the historic center, among classical buildings, baroque churches, and Roman monuments! Lecce is a precious gem, made of clear blue sky and ancient shining buildings, we wonder with the elaborate facades, the masterpiece of our Baroque art, and interiors that erupt with symphonies of angels, cherubs, saints, and flowers! it is an enchanted place, where time seems to have stopped!
The secret of Perfect Pasta
If you love to eat and cook come and join me in the SudKitchen Laboratory.
In a professional but informal atmosphere I will personally guide you to discover the secrets of the perfect pasta dish.
I will teach you how to make many types of homemade pasta in a real kitchen workshop. We will make dough with egg, semolina and water and colored dough with vegetables. You will learn the cutting techniques and we will make sauces to accompany our pastas. At the end of the experience we will cook all the pasta and sauces made during the lesson and we will eat them with excellent wine and a selection of typical cold cuts and cheeses, artisanal and organic.
Strolling through Lecce
We will go around the old town of Lecce for about 2hrs. I'll show you the most important Baroque and Roman monuments and I'll take you to discover some hidden corners of the town. I'll tell you about its history, its traditions, its traditional food! Lecce will surprise you!

Lecce Street food and sightseeing tour
After meeting, we will start our walking between the alleys of the old city centre headed to our first tasting of salami and wine. I will tell you the history related to the main highlights such as Basilica of Santa Croce or piazza Duomo and many places that we will find on the way. From one place to the other we will stop to some shops to delight your palate with the most famous samples of Salento street food such as the "rustico": a soft puff pastry disc filled with mozzarella, tomato and béchamel, or the "frisella": a twice-baked bread roll topped with fresh tomato and olive oil . The tour will take place either at lunch or dinner time, as it is an ideal way to do some sightseeing while having a light meal like locals use to do.

Cooking class with Livio
La "Cooking class with Livio" nasce dall'amore per la cucina italiana e per il Salento, terra in cui sono nato e cresciuto. Mi diverte molto l'idea di fare conoscere alla gente le basi della cucina salentina, fare vedere passo dopo passo come nasce la pasta fresca. La mia esperienza infatti, è un full immersion di una durata di quattro ore nell'arte dell'impastare. Scoprirai stupendoti che bastano veramente pochi ingredienti, di uso quotidiano tra l'altro, per realizzare la tipica pasta leccese. Divertimento è la parola chiave della "cooking class with Livio", inteso come curiosità nella scoperta di questa arte. Ti guiderò in maniera pratica nella realizzazione della pasta fresca e con amore per la mia terra vi racconterò qualche aneddoto e curiosità sull'importanza di questa arte per noi leccesi.
Non c'è limite d'età per la mia esperienza. Accolgo tutti, bambini ,adulti e anziani.
La lezione verrà accompagnata da un aperitivo scelto da me con prodotti locali km 0 e degustazione di vini del posto.

Painting & Aperitifs at the artist's rooftop studio
Our experience will begin by meeting at the Piazzetta Raimondello Orsini (AKA Piazzetta della Tipografia)
and we will be walking a few steps to get to my home terrace home studio, located in a historical building from the 16th century, in the very heart of the Historical District only 50 m away from the Duomo Cathedral.
Upon arrival refreshments will be provided alongside with all the needed painting materials.
Together we'll create while sharing good conversations and most delicious local wine.
You will be immersed in a magical moment away from the busy streets of Lecce and get to feel the sunset energy of the historical city.
This experience is an adventure into paint and art that unleashes your inner creator in a playful and joyous manner. There is nothing fearful or pretentious in this art class, just fun, creativity & experimentation.
By the end of the session you will return home with your own unique painting and plenty of memories and uplifting sensations.
Picnic in the Salento vineyards
This tasting package will bring you among our vineyards, comfortable and in complete privacy. An expert from the company will help you choose your bottles, then let you taste the outdoors.
In your picnic basket, you'll find two bottles of wine of your choice: a bowl of peppers underneath turmeric oil with crispy frieze, veggie pâté, a packet of friselline, and a bag of mixed puccette. In short, the real Salento aperitivo.
We are mindful of sustainability: you'll bring all the products you don't consume during the tasting, so that there is no waste.

I will welcome you to my house to let you feel the excitement of preparing pasta made at home from Salento.
You can choose whether to knead and create the pasta or even cook it and taste it.

We will prepare three types of homemade pasta together:
Orecchiette, sagne incannulate and maltagliati.

Rich tasting of Salento's wines
We will meet in the room that I have personally chosen for this event. Here 6 bottles of wine will be served, 1 or 2 of white wine, 2 of rosé and 2 of red, produced from typical local grapes such as Negroamaro, Primitivo il Fiano and Verdeca, accompanied by a selection of typical gastronomic products of Salento such as olives, Pizzi, Pucce, Frize, Rustici, and fresh cheeses such as mozzarella and burrata. For each label tasted I will tell you the history of the wine and of the producing cellar, telling you about the production techniques and the history of the terroirs related to the selected wines and I will tell you the history and traditions related to Salento.

Mix raw products with passion, and prepare the dough of pasta fresca improving your cooking skills, knead, cut and shape Orecchiette and Maccheroni al Ferretto (ferretto pasta tool). With the guidance of a passionate local chef you will prepare two different sauces to dress your pasta the classic "fresh tomato red sauce" and chickpeas and local vegetables topping

Salento's WineriesTour
We will leave with an Italian car from the hystorical center of Lecce at 9:30 am. We will discover and visit 3 different wineries typical of Salento. You will be able to visit the traditional concrete tanks used in the past to make wine, you will be able to visit the barrels, see the entire production area, and I will explain the various techniques used here in Salento to make wine. You will be able to visit and discover the 80-year old vines grown with the typical Apulian Alberello system "and you will taste many wines and grape varieties that you will find only here in southern Puglia, such as Negroamaro, Primitivo, Verdeca, Malvasia nera, the Fiano and many others. And then I will tell you many stories of the agricultural tradition of Salento while you will taste the wine together with a light lunch.

Tour of Lecce and its flavours
Si parte da piazza sant'Oronzo, il salotto della città e si prosegue verso piazza Duomo, che la sera, grazie al gioco di luci soffuse sulle facciate barocche, offre una suggestiva atmosfera crepuscolare. Come intermezzo la prima degustazione con il rustico leccese, disco di pasta sfoglia ripieno di mozzarella, besciamella e pomodoro, re del cibo di strada locale, insieme al dolce salentino per eccellenza, il pasticciotto: pasta frolla fragrante e profumata, ripiena di crema pasticcera. Lasciate ancora spazio, perchè ci sarà un terzo assaggio, che non vi svelo per non rovinare la sorpresa.
Vi mostrerò i bar storici del centro, dove i leccesi fanno il loro happy hour. Durante il tour vi racconterò aneddoti e vi svelerò dettagli sui monumenti ed edifici che incontreremo, che vi faranno conoscere la storia della città più in profondità. Passeremo da una delle antiche porte di ingresso della città, porta Napoli. Resterete incantati di fronte alla facciata della basilica di santa Croce, che con i suoi ricchi ricami intarsiati nella pietra, rappresenta il simbolo del barocco leccese. In piazza sant'Oronzo vi racconterò la storia della colonna che regge la statua del santo e quella della lupa, nel mosaico al centro della piazza. Vi aspetto!
