As soon as we’ll be ready, we’ll begin with our traditional cooking lesson where our mothers and grandmothers will show you all the techniques for making Focaccia, handmade pasta and cheese. They will teach you all the techniques of the past and you will have to prepare everything with them. Polignano by boat: cliffs and sea caves!
A fantastic and unforgettable boat trip to discover the breathtaking sea caves and the famous cliff of Polignano a Mare, visiting the whole coastline from North-West to South-East, enjoying especially the view of the sea cave with a restaurant inside "Grotta Palazzese", the islet "Scoglio dell'Eremita" and the beautiful sea cave "Grotta Stampagnata". A unique informal experience taking about 1 hour, with an experienced driver-guide, who will reveal some secrets and legends hidden behind such unique natural beauties. Enjoying the point of view of Polignano from the sea is a wonderful experience not to miss :) Also ideal for groups and teams: please send a message if you have a large group. Extra virgin olive oil tasting in the olive garden
Learn about olive oil tasting in the charming setting of our olive grove. We meet early in the afternoon at the family olive grove, Cantasole. When we arrive, we will have a walk with Max and Bruno (our welcoming dogs) to discover the history and the hidden corners of our farm. During our walk we will come into contact with olive trees of 200 years old as well as 4 years old trees and learn all the characteristics of olive trees cultivation. From tree to the table, we will have a practical lesson under the shade of an ancient olive tree and learn the basics of olive oil tasting to discover the organoleptic qualities of 3 different olive oils, how to recognize defects and attributes. To end of our experience, we will share a glass of wine (or fresh juice) with some typical dishes from Salento. You will enjoy an immersion into the shades of our land with simple and tasteful ingredients. The best is always to spend some time together at sunset with a breeze of the end of a hot day. My mother-in-law, Grandma Tetta makes home-made pasta since she remembers it: orecchiette, minchiareddhi, tria, sagne 'cannulate, with love and dedication unchanged over time. Certainly her hands work better than mine and he especially likes to explain this wonderful art to young and old people! You will learn how to made the orecchiette with grandma Tetta a.. a woman of the past, I recommend do not make her angry! Then after the workshop we we ll go on terrace for a tipicalsalentine dinner: from antipasto to sweets, with two kind of pasta: sagne ncannulate e orecchiette. You will be fascinated by the anecdotes about how my grandmother prepared the pasta and what the kitchen represented in the past and in part still represent. An immersion in the real life of Puglia and Italian sociology! I will let Elisa, my friend and precous collaborator as a super expert in the Apulian pasta, communicate with the gestures and with the example; she does not speak ehglish but she will always be able to communicate with the heart and experience. And once you will be at home producing your own good food, will be precious the memory of what she showed you. I will instead communicate, if necessary at the same time, in English, Italian and French and you will probably laugh at my flights from one language to another and my role as a "slave in the kitchen of Elisa":-) allows me to tell still so much of Puglia through the many typical objects that I collect at home. The wine, the foods that I serve together with the pasta that we prepare together and that are all local and largely fruit of my organic vegetable garden, do the rest. The lunch that follows is collaborative, all peoples help and, crockery and pans in the hands, all peoples invade my house too, with my great pleasure because this allows me to tell still so much of Puglia through the many typical objects that I collect at home. Traditional Puglia cooking class
The cooking class will take place all year round at my family trullo. Here you will take the course either inside an equipped kitchen or outside, under a comfortable wooden patio and you can eat here or in the shade of a centuries-old olive tree. The course will be structured as follows: Welcoming the participants and detailed presentation of the host and the experience; Introduction to the history and gastronomic culture of Puglia; Practical phase which includes three preparations: Preparation of tarallini with wild fennel; Preparation of a typical sweet made with local jams; Preparation of orecchiette with the use of local semolina. At the end of the preparations, the guests comfortably seated at the table under an ancient olive tree (if the course takes place at the trullo) or in a suggestive dining room overlooking the garden, or in the garden itself in favorable weather conditions, will move on to the tasting phase with the following menu: -tarallini and other snacks, -orecchiette topped with meat roll ragout or vegetarian sauce, -the dessert they prepare, -a good glass of wine and a homemade rosolio. Making and cooking pasta One by One Homemade orecchiette
Armed with board, flour and water, we will make together with our guests Orecchiette, a typical Apulian pasta shape. We will cook them following the traditional recipes, with fresh scattarisciati tomatoes or with cime di rapa (turnip greens), depending on the season. In addition to ‘’our orecchiette’’, we will taste a typical Salento menu consisting of tarallini, frise, cheese, mozzarella, legumes and vegetables that we could also have the chance to harvest from our home’s garden, depending on availability. There will also be a good bottle of Salento wine on the table and the liqueur made with laurel leaves collected from the great hedge of grandparents’ house. Narrations and explanations on the history and traditions of Salento will accompany the culinary experience. Orecchiette&Tradizione
Cooking is part of our family traditions. We prepare and cook typical local dishes. Guests are welcome!! You will be the cooks here, preparing orecchiette, sagne, minchiareddrhi under our instructions. You will be equipped with rolling-pins, a table of course, cooking tools and all the ingredients needed in the preparations of our pasta fresca. We will tell you the origins of the different kinds of flours and we will answer all your questions. Then, Pittule will be in turn!! It’s the typical tasty fried food during our Christmas period. We will show you how a Pasticciotto is prepared and you can taste it!! We will hand you a manual with all the recipes written both in Italian and English. Our guests can take everything they have prepared with them, in order to come back home with a little piece of Salento. After an introduction of the history of the old town and the local customs of the Old Town People, we will join the house of a Grandma, a real pasta maker, not a usual cooking school! During the experience you will taste a sample of "Orecchiette" made by you with homemade ragù!
Sailing on bari coast
Our experience takes about 3 hours, we'll meet in the morning at 10am and head out to explore the Bari coastline. We will meet at the Marina inside the commercial port where the boat is moored, and we will sail away for our experience. We will head north to the wind allowing and we will walk along the city, we will admire the Basilica of San Nicola,the Cathedral and the evocative wall that surrounds the old city. We will stop at the old port of Bari, where fishermen land, where we will enjoy a typical Bari aperitivo and after spending a few hours of pure relaxation, adrenaline and fun you enter the port. Eat and discover Bari like a local
The visit, that will last for 3 hours will start from Piazza Ferrarese, where we will start telling you some secrets of beautiful Bari. There we will look for Vito, the musician, to experience "Tarantella" a typical Apulian dance and have a funny time singing and playing with his instruments. Then we will stop at one of the oldest "Panificio" of the city to taste the typical focaccia. This will give us some good energy to continue discovering the city. Next stop will be the cosy Basilica of Saint Nicholas, and the secrets of its walls, the beautiful Cathedral of Saint Sabinus and the millenary Swabian Castel. From there we will stop again to visit a typical "Salumeria" to taste different types of salumi and cheese. This time the food will be accompanied by a glass of delicious Primitivo wine. We will continue to the Pasta Street where Signora Nunzia makes some "orecchiette" the typical pasta.... are you ready to giving it a try??? At Signora Nunzia's house we will introduce you to some friends. And yet another stop to taste typical sgagliozze freshly cooked by Signora Maria. Last stop, taste of yummy artisan icecream. We will explore the Palazzese Cave known to host a restaurant between rocks and sea! You'll see Isla de l 'Eremita, where a man has been isolating for decades! And caves that welcome the sun inside! We will also see the statue of Domenico Modistico and ancient buildings built on the rocks overlooking the sea, which arestill inhabited! The complete tour of the sea caves of Polignano a Mare: this is our main service, which we carry out with dedication and professionalism. The tour, which lasts about 1 hour and 30 minutes, also provides the opportunity to make a stop for swim near the coast of Polignano. The departure of the tour is scheduled from the port of San Vito, a fraction of Polignano a Mare about 3 km close to the town. During the experience we will visit some sea caves until the border with the nearby town of Monopoli, and then we will return to the port of San Vito. Other things to note During the tour it is possible to have drinks and snacks. The transfer to the port of San Vito is also covered by a tuk tuk service.
