In our cozy and 100% safe environment, we'll feel how Pasta is an experience of Love and Tradition, made with the Fresh ingredients our Italian Mum would choose for us on a Sunday Morning :) I Promise it to you as I did to all the 3300+ happy people who took this class (*ALWAYS* write me before booking here) Starting from scratch, YOU'll make the dough manually, I'll tell you how to play with it and we'll make our own meal through - both - a traditional and a creative process. While YOU'll create all the different fillings, the proper sauce(and a surprise one, made right at the moment!). Then we'll have a break to taste 5+ different kind of cheeses and local aged ham. Guided and unlimited tasting it's necessary to learn a way to get a proper result that you will be happy to replicate back home. The Secrets of Parmigiano Reggiano Full
At the arrival I will offer you cofee break, and I will give you a lab coat for the access to the production area. I’ll bring you along a complete tour to discover all the steps of Parmigiano Reggiano’s production. We’ll see where the animals are bred and where the milk is mould. We’ll go into the cheese factory during milk processing and we'll witness in cooking and making cheese wheels. We’ll see then the process of salting and maturing up to enter the huge “caveau”, where thousands of cheeses wheels are guarded and laid out in long rows in the silent maturation rooms and where the scent of cheese will smell so nice and exciting that we won’t be able to resist till the final tasting of cheese and local typical products. Tortellini with a local Sfoglina
I will host you at Ermellina, my newly opened B&B, located in a charming and characteristic village in the heart of Emilia, the famous Food-Valley. Our "lesson" will start talking about our history, traditional cuisine, and local traditions. Then we’ll have fun kneading flour and eggs in order to make tortellini and tagliatelle, that we’ll cook and eat combined to a wine tasting of different types of Lambrusco (local sparkling red wine). Upon arrival after a brief introduction on the history of Parmigiano Reggiano, I will provide you with everything you need for access to processing (gown, hair cap, shoe covers, gloves). I will take you through a complete path to discover all the phases of the creation of Parmigiano Reggiano. We will enter our dairy during the processing of the milk and we will assist in the cooking and production of the cheese shapes. We will then see the salting and seasoning process up to enter the gigantic vault inside which are kept thousands of cheese shapes stacked on huge shelves as far as the eye can see and where the scent of the cheese will inebriate us until we can not resist arrival of the tasting of cheeses and typical local products. We will also visit the places where animals are raised and where milk is milked. Making handmade pasta in Bologna
We will make handmade fresh pasta and all the other dishes from scratch in a warm and professional real kitchen. It's not a demonstration, it's a real hands-on class of 3 or more hours where you will make and understand all the steps, guided by my 15-years experience in teaching. Handmade pasta is made using only the rolling pin (never talk with me about machines!) and it is a real art, maybe not immediate but challenging and you will be really proud of your work. At the end of the class you will have learned all the tricks of the local chefs so, when back home, you can astonish your friends with your amazing cooking. You can choose all the dishes we will make so PLEASE CONTACT ME BEFORE BOOKING in order to decide together what we are going to prepare. Join me in a fantastic cooking class, you'll be able to mix together flour and eggs the Italian way. I'll welcome you at the door wearing a mask. After washing hands, we'll have a coffee and small talk. You'll learn all the secrets to making the traditional fresh-eggs pasta and tips about the origin of our amazing food. I achieve a balance between demonstration and hands-on at the working station. We'll prepare two different pasta shapes and try to shape another three. Then you'll see me in the kitchen cooking and preparing the dishes. You'll sit at the table at a 1-meter distance from one another. I'll take you there and let you know the particular story that's behind its construction. After showing you some of my favorite spots, we'll go to Via delle Pescherie Vecchie, and enter into the world Bologna is famous for: food! Situated in the center, this street is filled with restaurants and markets. By now, you'll probably be hungry so I'll recommend the best Italian restaurants! Of course, we can't miss the university district as well, where we'll also head into the ex-Jewish Ghetto of Bologna. The world of Truffle - hunting & cooking
Ready to jump into the Tuscan’s hills?!Perfetto!! From my house in the heart of Mugello area and guided by Lupo, my fun and active cocker spaniel, we will walk into the tuscan’s woods looking for the most precious of the all gifts that the nature can give us: Truffle! In this moment we specifically will hunt the "Tuber Uncinatum" Autumn or Burgundy truffle. I will take you to my secret spots to find as many as we can, if we find them! Once we are done hunting, we will come back to my house (where truffles are always in the fridge!!) and we will cook together a 3 courses meal, all with Truffle: -a starter; -pasta o gnocchi o risotto; - a dessert. Making lunch we will follow some of my grandma’s centenary recipes with truffle. The menu changes according to the season and the fresh products that I have available in the farm or in the local organic farm around me. I truly believe in the “farm to table” concept and that’s what you will find here. Learn how to make homemade pasta easily and successfully. We will meet in Florence at our cooking school located in the historic center, easy to reach, 5 minutes from the Arno river. We are a team of professionals chefs, we are pleased to meet you and let you spend a nice time with us for a fun and unique lesson. We will teach the secrets how to make RAVIOLI, FETTUCCINE or SPAGHETTI & TORTELLI in different shape. We will provide you with the tools useful for the preparation: kitchen gown, rolling pin and pasta cutter, eggs and flour. After the preparation, we will show you all the steps necessary for the preparation of sauces such as "Pommarola" and "Ragù alla bolognese". Emilia Romagna cheese tour
Are you a cheese lover? Would you like to know more about our regional dairy products, but you never had the chance? Do you like to try new cheese flavors? Then you can’t miss our 2 hours walking and tasting tour through the Emilia Romagna cheeses. Starting from the medieval Market, where you can find all the typical products of Bologna, I will introduce you to all the traditional cheeses that our beautiful region could offer, beginning with the king, his majesty Parmigiano Reggiano. You can learn how it's made and how many different kinds you can find, depending on the cow breeds. We will talk about Grana Padano and why it's so different from Parmigiano, we will discover Pecorino di fossa and squacquerone, typical cheeses of Romagna. At the end of the tour we will head to my house to taste them all and catch the differences among them, adding some jams, honey, wine jelly, caramelized figs and some drops of the real balsamic vinegar. The highlight of the tasting is the rare possibility to taste the Traditional Balsamic vinegar from Modena PDO 25 years old, completely different from what you have tasted before! Is your mouth already watering? If you die for cheese and want to learn more about the typical ones of Emilia Romagna, this is the experience for you! To the Countryside to MAKE PIZZA
We will be making high quality Pizza surrounded by nature in the heart of Mugello-Tuscany country side, in a real wood fire pizza oven; an extraordinary experience. We will enjoy a beautiful lunch outside in my garden eating Pizza and tasting local wines. A Pizza Party!!!! Together we will make a pizza dough going through all the steps and I will show you all my secrets to have it perfect! The pizza dough that we are going to eat I'll make minimum 24 hours ahead the experience, so we can have a very digestible and good pizza!! I truly believe in the farm to table concept, all the ingredients that we are going to use for the dough and the toppings are either from my garden or very locally sourced. Just an example the passata for the topping comes from the tomatoes growing in my garden and the mozzarella from a local farm called il forteto!!!!but there will be many many more toppings!!!! Other things to note This amazing experience is taking place in my home in the country side in the middle of the nature, the road to get up here is quaint, rustic and you find a part of gravel road as well!! For those without transport, you can easily get the train from Florence (Santa Maria Novella) to Dicomano and then I'll pick you up.
