Making and cooking pasta One by One Homemade orecchiette
Armed with board, flour and water, we will make together with our guests Orecchiette, a typical Apulian pasta shape. We will cook them following the traditional recipes, with fresh scattarisciati tomatoes or with cime di rapa (turnip greens), depending on the season. In addition to ‘’our orecchiette’’, we will taste a typical Salento menu consisting of tarallini, frise, cheese, mozzarella, legumes and vegetables that we could also have the chance to harvest from our home’s garden, depending on availability. After our welcome we’ll offer you a no alcoholic drink with fresh fruit if you prefer and you will also enjoy our pool waiting for the beginning. As soon as we’ll be ready, we’ll begin with our traditional cooking lesson where our mothers and grandmothers will show you all the techniques for making Focaccia, handmade pasta and cheese. They will teach you all the techniques of the past and you will have to prepare everything with them. When every dishes will be ready, the focaccia will be baked in the wood-fired oven and you will have dinner with the products of yourselves made (Focacce, Orecchiette and Formaggio) and also other traditional dishes we will prepare for you. Extra virgin olive oil tasting in the olive garden
Learn about olive oil tasting in the charming setting of our olive grove. We meet early in the afternoon at the family olive grove, Cantasole. When we arrive, we will have a walk with Max and Bruno (our welcoming dogs) to discover the history and the hidden corners of our farm. During our walk we will come into contact with olive trees of 200 years old as well as 4 years old trees and learn all the characteristics of olive trees cultivation. From tree to the table, we will have a practical lesson under the shade of an ancient olive tree and learn the basics of olive oil tasting to discover the organoleptic qualities of 3 different olive oils, how to recognize defects and attributes. To end of our experience, we will share a glass of wine (or fresh juice) with some typical dishes from Salento. You will enjoy an immersion into the shades of our land with simple and tasteful ingredients. The best is always to spend some time together at sunset with a breeze of the end of a hot day. At the farm, it’s possible to buy our extra virgin olive oil and all the related products we will try together during the experience. We also ship everywhere in Europe. ***Contact me to arrange a cooking class even if you don't see dates open*** We will make together the dough for pasta with flour and water, trying to realize different traditional shapes of Salento's pasta: sagne torte, orecchiette and minchiareddhi. Once made our pasta you'll have the chance to join an Italian style meal, we will taste it together with the traditional tomato sauce (sugo) with fresh goat cheese or with spicy cheese (ricotta forte) and with a seasonal sauce such as turnip, fresh tomatoes, seasonal pesto or much more. Before tasting our pasta we will enjoy an appetizer with local cheeses coming from farms around Lecce and seasonal veggies, drinking complimentary rosé wine from a local farm. We are also hosting people through Airbnb in our apartment, so you are welcome to stay with us for a full experience of Lecce and Salento. You can ask in advance to use special flours. Traditional Puglia cooking class
The cooking class will take place all year round at my family trullo. Here you will take the course either inside an equipped kitchen or outside, under a comfortable wooden patio and you can eat here or in the shade of a centuries-old olive tree. The course will be structured as follows: Welcoming the participants and detailed presentation of the host and the experience; Introduction to the history and gastronomic culture of Puglia; Practical phase which includes three preparations: Preparation of tarallini with wild fennel; Preparation of a typical sweet made with local jams; Preparation of orecchiette with the use of local semolina. At the end of the preparations, the guests comfortably seated at the table under an ancient olive tree (if the course takes place at the trullo) or in a suggestive dining room overlooking the garden, or in the garden itself in favorable weather conditions, will move on to the tasting phase with the following menu: -tarallini and other snacks, -orecchiette topped with meat roll ragout or vegetarian sauce, -the dessert they prepare, -a good glass of wine and a homemade rosolio. "Note: from 10 to 15 June '21 only MTB e-bikes will be used". I will be your guide for the tracks and trails of the Valle d'Itria, along sections of the Aqueduct Cycle Route we will visit the places where I grew up including Cisternino and Locorotondo rewarded as the most beautiful villages in Italy and then return to Martina Franca beautiful baroque city. The roads we will follow will be all paths traced and secured, but hidden in the beautiful countryside. I will show you how easy it will be to face the different "climbs" of Valle d'Itria with a pedal assisted bike even for those who are not sporty and trained. We will go to the farm and taste some Apulian specialties with a nice glass of wine, all of local production and those who want, can also buy products. The excursion will give you an unforgettable experience! The real and unique Puglia starts here. Sarete in compagnia della nostra famiglia per un intera giornata.Per prima cosa imparerete a lavorare la pasta con il solo uso delle vostre mani per ricavarne orecchiette pizzareddri sagne ncannulate....che porterete a casa.Poi ci recheremo nel vicino orto a raccogliere ogni tipo di primizia per poi ricavarne gustosissime pietanze.Finalmente ci accomoderemo in giardino a gustare il sapore dei nostri piatti.

My mother-in-law, Grandma Tetta makes home-made pasta since she remembers it: orecchiette, minchiareddhi, tria, sagne 'cannulate, with love and dedication unchanged over time. Certainly her hands work better than mine and he especially likes to explain this wonderful art to young and old people! You will learn how to made the orecchiette with grandma Tetta a.. a woman of the past, I recommend do not make her angry! Then after the workshop we we ll go on terrace for a tipicalsalentine dinner: from antipasto to sweets, with two kind of pasta: sagne ncannulate e orecchiette. Orecchiette&Tradizione
Cooking is part of our family traditions. We prepare and cook typical local dishes. Guests are welcome!! You will be the cooks here, preparing orecchiette, sagne, minchiareddrhi under our instructions. You will be equipped with rolling-pins, a table of course, cooking tools and all the ingredients needed in the preparations of our pasta fresca. We will tell you the origins of the different kinds of flours and we will answer all your questions. Then, Pittule will be in turn!! It’s the typical tasty fried food during our Christmas period. We will show you how a Pasticciotto is prepared and you can taste it!! We will hand you a manual with all the recipes written both in Italian and English. Our guests can take everything they have prepared with them, in order to come back home with a little piece of Salento. La "Cooking class with Livio" nasce dall'amore per la cucina italiana e per il Salento, terra in cui sono nato e cresciuto. Mi diverte molto l'idea di fare conoscere alla gente le basi della cucina salentina, fare vedere passo dopo passo come nasce la pasta fresca. La mia esperienza infatti, è un full immersion di una durata di quattro ore nell'arte dell'impastare. Scoprirai stupendoti che bastano veramente pochi ingredienti, di uso quotidiano tra l'altro, per realizzare la tipica pasta leccese. Divertimento è la parola chiave della "cooking class with Livio", inteso come curiosità nella scoperta di questa arte. Ti guiderò in maniera pratica nella realizzazione della pasta fresca e con amore per la mia terra vi racconterò qualche aneddoto e curiosità sull'importanza di questa arte per noi leccesi. Non c'è limite d'età per la mia esperienza. Accolgo tutti, bambini ,adulti e anziani. If you love to eat and cook come and join me in the SudKitchen Laboratory. In a professional but informal atmosphere I will personally guide you to discover the secrets of the perfect pasta dish. I will teach you how to make many types of homemade pasta in a real kitchen workshop. We will make dough with egg, semolina and water and colored dough with vegetables. You will learn the cutting techniques and we will make sauces to accompany our pastas. At the end of the experience we will cook all the pasta and sauces made during the lesson and we will eat them with excellent wine and a selection of typical cold cuts and cheeses, artisanal and organic.
