After our welcome we’ll offer you a no alcoholic drink with fresh fruit if you prefer and you will also enjoy our pool waiting for the beginning. As soon as we’ll be ready, we’ll begin with our traditional cooking lesson where our mothers and grandmothers will show you all the techniques for making Focaccia, handmade pasta and cheese. They will teach you all the techniques of the past and you will have to prepare everything with them. When every dishes will be ready, the focaccia will be baked in the wood-fired oven and you will have dinner with the products of yourselves made (Focacce, Orecchiette and Formaggio) and also other traditional dishes we will prepare for you. Obviously water, beer and wine are included. Making and cooking pasta One by One Homemade orecchiette
Armed with board, flour and water, we will make together with our guests Orecchiette, a typical Apulian pasta shape. We will cook them following the traditional recipes, with fresh scattarisciati tomatoes or with cime di rapa (turnip greens), depending on the season. In addition to ‘’our orecchiette’’, we will taste a typical Salento menu consisting of tarallini, frise, cheese, mozzarella, legumes and vegetables that we could also have the chance to harvest from our home’s garden, depending on availability. There will also be a good bottle of Salento wine on the table and the liqueur made with laurel leaves collected from the great hedge of grandparents’ house. Polignano by boat: cliffs and sea caves!
A fantastic and unforgettable boat trip to discover the breathtaking sea caves and the famous cliff of Polignano a Mare, visiting the whole coastline from North-West to South-East, enjoying especially the view of the sea cave with a restaurant inside "Grotta Palazzese", the islet "Scoglio dell'Eremita" and the beautiful sea cave "Grotta Stampagnata". A unique informal experience taking about 1 hour, with an experienced driver-guide, who will reveal some secrets and legends hidden behind such unique natural beauties. Enjoying the point of view of Polignano from the sea is a wonderful experience not to miss :) Also ideal for groups and teams: please send a message if you have a large group. The cooking class will take place all year round at my family trullo. Here you will take the course either inside an equipped kitchen or outside, under a comfortable wooden patio and you can eat here or in the shade of a centuries-old olive tree. The course will be structured as follows: Welcoming the participants and detailed presentation of the host and the experience; Introduction to the history and gastronomic culture of Puglia; Practical phase which includes three preparations: Preparation of tarallini with wild fennel; Preparation of a typical sweet made with local jams; Preparation of orecchiette with the use of local semolina. At the end of the preparations, the guests comfortably seated at the table under an ancient olive tree (if the course takes place at the trullo) or in a suggestive dining room overlooking the garden, or in the garden itself in favorable weather conditions, will move on to the tasting phase with the following menu: -tarallini and other snacks, -orecchiette topped with meat roll ragout or vegetarian sauce, -the dessert they prepare, -a good glass of wine and a homemade rosolio. "Note: from 10 to 15 June '21 only MTB e-bikes will be used". I will be your guide for the tracks and trails of the Valle d'Itria, along sections of the Aqueduct Cycle Route we will visit the places where I grew up including Cisternino and Locorotondo rewarded as the most beautiful villages in Italy and then return to Martina Franca beautiful baroque city. The roads we will follow will be all paths traced and secured, but hidden in the beautiful countryside. I will show you how easy it will be to face the different "climbs" of Valle d'Itria with a pedal assisted bike even for those who are not sporty and trained. We will go to the farm and taste some Apulian specialties with a nice glass of wine, all of local production and those who want, can also buy products. E-bike tour around Alberobello
Questo è il miglior modo per apprezzare pienamente Alberobello e i trulli sparsi nella valle d'Itria in una mattina! Ci muoveremo dal luogo dell'incontro con biciclette a pedalata assistita fornite: mountain bike Trek con motore elettrico Bosch, biammortizzate, per adulti e bambini con più di 10 anni. In un giro ad anello scopriremo scorci suggestivi della campagna tra i trulli della Valle d'Itria, senza fatica grazie all'assistenza elettrica, su ogni tipo di percorso, grazie alle comode bici di alto livello. In circa 3 ore potremo godere di oltre 20 km di percorsi lontani dal traffico e dalle strade principali, tra muri in pietra a secco, trulli, boschi e campi coltivati, comprese le zone monumentali dei trulli. La difficoltà dei percorsi è sempre scelta su misura dei partecipanti: dai più semplici su asfalto e strade bianche, a quelli più tecnici (cross country e all mountain). Potremo scegliere tra la tranquilla e suggestiva Ciclovia dell'Acquedotto Pugliese, percorsi tecnici delle gare regionali di XC... impossibile elencare tutte le varianti! We’ll leave from Savelletri, heading to an Apulian Masseria. Here, we’ll get in touch with local people and in particular with the host to experience a traditional olive oil taste. It would be the opportunity to taste the typical Apulian focaccia,pasta, appetizer of cold cuts and cheese and mozzarella with tomatoes just prepared by Teresa, all accompanied by a drink. Then, before coming back , we’ll stop at Beach Bar to eat some local sweet products. Our tour ends with an amazing tasting of Apulian rosolii. It won’t be a simple tour, not even an e-bike tour but a little adventure: local life experience, far away from crowed places.

Pasta From Apulia & dinner in garden
You will be fascinated by the anecdotes about how my grandmother prepared the pasta and what the kitchen represented in the past and in part still represent. An immersion in the real life of Puglia and Italian sociology! I will let Elisa, my friend and precous collaborator as a super expert in the Apulian pasta, communicate with the gestures and with the example; she does not speak ehglish but she will always be able to communicate with the heart and experience. And once you will be at home producing your own good food, will be precious the memory of what she showed you. I will instead communicate, if necessary at the same time, in English, Italian and French and you will probably laugh at my flights from one language to another and my role as a "slave in the kitchen of Elisa":-) allows me to tell still so much of Puglia through the many typical objects that I collect at home. The wine, the foods that I serve together with the pasta that we prepare together and that are all local and largely fruit of my organic vegetable garden, do the rest. The lunch that follows is collaborative, all peoples help and, crockery and pans in the hands, all peoples invade my house too, with my great pleasure because this allows me to tell still so much of Puglia through the many typical objects that I collect at home. Wine, vineyard and food experience with arranged transfer
Imagine an evening of walking through the beauty of Puglia and its vineyards, tasting its wines and unique flavors. Don't forget to enrich the experience with local culture and curiosities about the wine and vineyards. We meet at the Fasano train station, from there through our organized transfer that will bring you in our family farm, in the Martina Franca countryside, in the heart of Valle d 'Itria (departure from Fasano train station at 17.45). In our farm we will start our Wine Experience: we will walk through our vineyards and tell you about their history, cultivation techniques, information about grape varieties and our terroir. Directly in the vineyard overlooking the valley or in our taverna-cantina we will taste 4 wines from our farm Trulli il Castaño. We will accompany every wine with a typical homemade appetizer for a light dinner. We will guide you through the tasting with many curiosities about the wines and their history, winemaking techniques and the territory. No shortage of magical landscapes, memorable sunsets, and good company. At 21.00 about the transfer service will wait you in the property to bring you back safely at Fasano train station by 21.40.
Modella la terracotta al tornio
Antonio ha imparato a usare il tornio fin da ragazzo dai vecchi maestri di Grottaglie. Oggi è uno dei pochi in zona a saperlo usare con così tanta maestria. Inizialmente, Antonio ti racconterà la storia della ceramica di Grottaglie e come questa cittadina del Sud Italia abbia ancora oggi il più grande distretto di produzione della ceramica in Europa. In seguito, Antonio ti spiegherà e mostrerà il processo di lavorazione dell’argilla, fino alla sua cottura e decorazione. Scoprirai così le differenze tra le tecniche di una volta e quelle in uso oggi. Nella seconda parte dell’esperienza, potrai rimboccarti le maniche e, sotto l’esperta guida di Antonio, imparerai a modellare l’argilla al tornio per trasformarla nella tua opera d’arte. Nota però che l’argilla fresca non è trasportabile e, nel caso volessi portare a casa la tua opera, potrai ripassare a prenderla dopo un paio di settimane o fartela spedire da Antonio una volta essiccata e cotta (spese di spedizione non incluse nel prezzo dell’esperienza). Modellare l’argilla è un’attività artistica rilassante, adatta a tutte le età. Durante la parte laboratoriale, avrai tempo di chiacchierare con Antonio per fargli tutte le domande che vorrai e conoscere meglio la sua storia di maestro ceramista.
