Varazze is part of the Ligurian Riviera known for its clear waters and for its culinary specialties. The rendezvous will be at 5:30 am at the fishing port. Here you'll meet our crew, afterwards you'll be welcomed on board. We'll give you a brief explanation of the work we are going to do, describing the gillnets, places where we are going to fish, and fishes we are looking for. You can watch the crew in action, while having fisherman's breakfast with hot focaccia and a glass of white wine. Other things to note A few days before setting off, we will get in touch to make sure the weather is safe for us to go out at sea. The time varies depending on the season, and therefore also on the type of fishing. The duration of the experience is just an indication, it can vary based on the catch, the weather etc.

PASTA & BASTA
I will welcome our group to my apartment where we will have our interactive cooking class. I will introduce you the program and the grandma traditional receipts that we will cook together: everybody will have his own apron and I will teach you how to cook the following dishes: - tagliatelle - ravioli - orecchiette or gnocchi all rigorously handmady During the preparation everybody will have his own space and ingredients to put in practice what I'll teach, meanwhile I will be glad to share with you the origin of different preparation, with some historical link and show you some tricks how to make a dish a real artwork so that you can be a real italian chef when you will invite your friends at home next time! During the class you will learn also italian names for different ingredients and in a whilw you will became a PASTA expert. Ready for your special meal? We will move to the terrace and we will share PASTA receipts just cooked during the class and we'll finish our convivial dinner with a real italian coffee and some more legend and local tips. Cooking class in Langhe!
Dogliani and the Langhe are the homeland of wine, there isn't a better way to welcome you than with a good glass of Dogliani wine! So it's time to get to work. We'll start with a delicious appetizer: vegetable flan with fondue. Then we will prepare handmade pasta combined with a sauce made with the freshest ingredients of the season. We will make tajarin, tagliatelle or maltagliati, served with vegetables, cheese, sausage or mushroom sauces, depending on the seasonal availability. Finally, following the tradition, we will prepare zabaione, the typical egg-based liqueur cream, perfect to combine with cakes and biscuits. After working hard, it will be time to enjoy our dishes in a pleasant friendly lunch. Please let me know about any intolerance or preferences during the booking process and I'll be happy to adapt the menu to meet your request. The experience is in Italian, if you need it in English I will arrange it without problems. During the class you will find the recipe book available in 4 languages: Italian, English, German or French.
THE SECRETS OF THE TAGGIASCA OLIVE OIL
Three ways to recognize a good extra virgin olive oil from a low quality one! As a guest of a family business which produces extra virgin olive oil of the Taggiasca cultivar (one of the best in the world) you’ll learn how to recognize it and you’ll be able to choose the best oil for your palate! I’ll be waiting for you in the parking lot of the village of Apricale (and I’ll provide you with all the details on how to reach it in the easiest possible way). From here on we’ll cross the lovely village on foot, endorsed as one of “Italy’s most beautiful villages”. Beyond the village, our walk among the olive trees will begin. The path is easy but slightly uphill (it’s possible to go by car along the last section if needed). Together we’ll discover the typical Ligurian terraces known as “fasce”, which were built thanks to the ancient art of the dry walls, recognized by UNESCO as a world heritage craft. Once at the olive grove I’ll tell you about the cultivation of the trees, from the initial pruning until the harvest and then the pressing. In the suggestive location of the olive grove I’ll reveal you the secrets of our job, I’ll make you taste our extra virgin olive oil and I’ll teach you how to recognize its features and differences with olive oils from other locations. Other delicacies from our land won’t be missing from the table, and they’ll make you fall in love with our Riviera.

Our Azienda Agricola is composed by fields of hazelnut trees, the farm, the bakery and the agritourism. First of all we'll explain you how we take care of our trees and of the land. Then we'll focus on the hazelnuts, so we'll tell you about the blooming, the maturation and the harvest. Here we'll discuss together about what is the integrated agricolure and why we follow this method. After this first part we'll pass through the farm and reach the "shelling-room", the place where we keep the nuts and the machines that shell them. Here we'll talk about the shelling-process, Piedmont I.G.P. Hazelnut and its role in the world market. For the last part of the tour we'll guide you to our bakery. Here we'll explain you how the hazelnut can be used in patisserie and we'll teach you to distinguish high-quality and low-quality products. At this point we'll also discuss about the great theme of food and how the production processes can influence the quality of it. At the end of the tour you will taste our cakes, cookies, hazelnuts, creams and chocolates in the agritourism! We like to highlight that with this visit we want to make people more conscious about great themes as artigianal food, integrated agricolure and self-maintenance on the line of Slow Food thoughts. Organic Family Owned Winery Experience in Liguria
Visit a beautiful family owned winery on the Liguria di Ponente hills, close to the sea and taste their organic wines such as Pigato, Vermentino, Rossese and Granaccia. For generations the family have preserved their own lands cultivating local products. Located in Bastia on the Albenga plain where they grow herbs, the family farmland runs along the River Arroscia up to Ranzo on the high slopes of Imperia where you will find vineyards and olive groves. The family will welcome you in her beautiful rural house and old cellar. You'll taste 4 different wines paired with local delicacies. The maison is also famous for herbs and oil production. The use of pesticides, fertilizers and suchlike chemical products is not part of our local tradition, so we have just carried on as they did in the past. Organic farming is not a technical or economical choice: it is simply a question of culture.
In Mountain Bike attraverso oliveti centenari
Appuntamento nella bella Porto Maurizio, una delle "due" Imperia (l'altra e' Oneglia), a bordo mare con vista sul caratteristico Borgo con le case colorate. Cominciamo a salire, lasciando il mare alle nostre spalle. Il territorio cambia colori: immensi uliveti a perdita d'occhio!! Queste piante producono una delle olive piu' famose al mondo: la"taggiasca" dalla quale si estrae un'eccellenza italiana unica, l'Olio Extravergine di oliva Monocultivar "Taggiasco". Questi uliveti sono adagiati sulle "terrazze", trattenute da chilometri di muri in pietra detti "a secco", una incredibile architettura millenaria che ha permesso di adattare un territorio altrimenti scosceso e inutilizzabile. Con una breve deviazione arriviamo nel piccolo Borgo di Valloria dove puoi ammirare le piu' di 100 porte dipinte di stalle, magazzini e cantine, vere e proprie opere d'arte. Riprendiamo la pedalata, sempre immersi tra uliveti centenari. Ed ecco Dolcedo, antico Borgo ligure famoso per il suo ponte in pietra, per le sue case seicentesche, i vecchi mulini, i vicoli pavimentati con ciottoli bianchi e neri. Un luogo unico che ti rimarra' impresso nei tuoi ricordi piu' belli!!! Riprendiamo la nostra pedalata. Finiamo questa intensa giornata rientrando ad Imperia visitando l'iconico Borgo antico.
