Armed with board, flour and water, we will make together with our guests Orecchiette, a typical Apulian pasta shape. After our welcome we’ll offer you a no alcoholic drink with fresh fruit if you prefer and you will also enjoy our pool waiting for the beginning. As soon as we’ll be ready, we’ll begin with our traditional cooking lesson where our mothers and grandmothers will show you all the techniques for making Focaccia, handmade pasta and cheese. They will teach you all the techniques of the past and you will have to prepare everything with them. When every dishes will be ready, the focaccia will be baked in the wood-fired oven and you will have dinner with the products of yourselves made (Focacce, Orecchiette and Formaggio) and also other traditional dishes we will prepare for you. Extra virgin olive oil tasting in the olive garden
Learn about olive oil tasting in the charming setting of our olive grove. We meet early in the afternoon at the family olive grove, Cantasole. When we arrive, we will have a walk with Max and Bruno (our welcoming dogs) to discover the history and the hidden corners of our farm. During our walk we will come into contact with olive trees of 200 years old as well as 4 years old trees and learn all the characteristics of olive trees cultivation. From tree to the table, we will have a practical lesson under the shade of an ancient olive tree and learn the basics of olive oil tasting to discover the organoleptic qualities of 3 different olive oils, how to recognize defects and attributes. To end of our experience, we will share a glass of wine (or fresh juice) with some typical dishes from Salento. You will enjoy an immersion into the shades of our land with simple and tasteful ingredients. The best is always to spend some time together at sunset with a breeze of the end of a hot day. Polignano by boat: cliffs and sea caves!
A fantastic and unforgettable boat trip to discover the breathtaking sea caves and the famous cliff of Polignano a Mare, visiting the whole coastline from North-West to South-East, enjoying especially the view of the sea cave with a restaurant inside "Grotta Palazzese", the islet "Scoglio dell'Eremita" and the beautiful sea cave "Grotta Stampagnata". A unique informal experience taking about 1 hour, with an experienced driver-guide, who will reveal some secrets and legends hidden behind such unique natural beauties. My passion for good food comes from this place where I will host you.The object is to share this authenticity with you. As a welcome you will be offered seasonal fruit picked from my orchard. I will tell you how to live in the countryside between animals and genuine flavors amplify our sense of belonging to a world to protect and preserve. Next, guests will learn to make two types of PASTA: ORECCHIETTE & CAVATELLI, the typical pasta of the Apulian Sunday, by hand. They will be involved in an outdoor cooking experience between flowers and authentic nature. I will share with you ancient recipes and secrets inherited from my grandmother. While we wait for the fresh pasta to dry under the sun just like tradition we will visit the vegetable garden from which you can taste vegetables and fruits at the moment directly from the field. Traditional Puglia cooking class
The cooking class will take place all year round at my family trullo. Here you will take the course either inside an equipped kitchen or outside, under a comfortable wooden patio and you can eat here or in the shade of a centuries-old olive tree. The course will be structured as follows: Welcoming the participants and detailed presentation of the host and the experience; Introduction to the history and gastronomic culture of Puglia; Practical phase which includes three preparations: Preparation of tarallini with wild fennel; Preparation of a typical sweet made with local jams; Preparation of orecchiette with the use of local semolina. At the end of the preparations, the guests comfortably seated at the table under an ancient olive tree (if the course takes place at the trullo) or in a suggestive dining room overlooking the garden, or in the garden itself in favorable weather conditions, will move on to the tasting phase with the following menu: -tarallini and other snacks, -orecchiette topped with meat roll ragout or vegetarian sauce, -the dessert they prepare, -a good glass of wine and a homemade rosolio. Modella la terracotta al tornio
Antonio ha imparato a usare il tornio fin da ragazzo dai vecchi maestri di Grottaglie. Oggi è uno dei pochi in zona a saperlo usare con così tanta maestria. Inizialmente, Antonio ti racconterà la storia della ceramica di Grottaglie e come questa cittadina del Sud Italia abbia ancora oggi il più grande distretto di produzione della ceramica in Europa. In seguito, Antonio ti spiegherà e mostrerà il processo di lavorazione dell’argilla, fino alla sua cottura e decorazione. Scoprirai così le differenze tra le tecniche di una volta e quelle in uso oggi. Nella seconda parte dell’esperienza, potrai rimboccarti le maniche e, sotto l’esperta guida di Antonio, imparerai a modellare l’argilla al tornio per trasformarla nella tua opera d’arte. Nota però che l’argilla fresca non è trasportabile e, nel caso volessi portare a casa la tua opera, potrai ripassare a prenderla dopo un paio di settimane o fartela spedire da Antonio una volta essiccata e cotta (spese di spedizione non incluse nel prezzo dell’esperienza). Modellare l’argilla è un’attività artistica rilassante, adatta a tutte le età. Durante la parte laboratoriale, avrai tempo di chiacchierare con Antonio per fargli tutte le domande che vorrai e conoscere meglio la sua storia di maestro ceramista.

We will take you inside a characteristic Salento farmhouse surrounded by olive groves and vineyards, all accompanied by a tasting of typical Salento products. Guests will be guided on a visit to the vineyard at sunset and will receive a welcome drink with organic products at km0 which will be enriched by notions on the techniques of working the land. Later they will be seated at the tables on the square of the farm surrounded by greenery and in the spirit of the Salento tradition and the dinner will be based on entirely self-produced dishes . You will witness the preparation of homemade orecchiette that will be tasted during dinner. The dishes served will vary according to the seasonality of the harvest and various courses will always be provided. My mother-in-law, Grandma Tetta makes home-made pasta since she remembers it: orecchiette, minchiareddhi, tria, sagne 'cannulate, with love and dedication unchanged over time. Certainly her hands work better than mine and he especially likes to explain this wonderful art to young and old people! You will learn how to made the orecchiette with grandma Tetta a.. a woman of the past, I recommend do not make her angry! Then after the workshop we we ll go on terrace for a tipicalsalentine dinner: from antipasto to sweets, with two kind of pasta: sagne ncannulate e orecchiette. Sarete in compagnia della nostra famiglia per un intera giornata.Per prima cosa imparerete a lavorare la pasta con il solo uso delle vostre mani per ricavarne orecchiette pizzareddri sagne ncannulate....che porterete a casa.Poi ci recheremo nel vicino orto a raccogliere ogni tipo di primizia per poi ricavarne gustosissime pietanze.Finalmente ci accomoderemo in giardino a gustare il sapore dei nostri piatti.
