Cook & Dine: Mole & Mexican Salsas
Having met in a vast and beautiful courtyard, we will proceed to the large kitchen where the cooking lesson will commence. We will begin by preparing some delicious salsas, followed by an authentic and traditional Mexican mole, tasty enmoladas, and mexican rice. (Please let me know in advance if you have special dietary needs). I will educate you on the ingredients, tell you about the culinary and nutritional values, and how to prepare and cook each part of the meal. I will teach you the history and cultural importance of the Mole and how it used to be the “Food of the Emperors”, reserved only for the upper class of the Mayan and Aztec society. During the lesson you will enjoy a pure cacao chocolate drink, and be enticed to explore your environment: the cozy den with its fireplace, library and piano; and the surrounding courtyard with its organic gardens and gorgeous landscapes. Having prepared the delicious meal, we will sit down and dine, enjoying the meal and engaging in wonderful conversation. With the meal and throughout the class we will have delicious Mexican wine available as well as a cold authentic cacao drink and cool refreshing water. A prehispanic journey to the stars
If you are interested in the relation between astronomy and the design of prehispanic architecture, choose this experience. So start your day visiting a unique prehispanic ceremonial site known as Cañada de la Virgen (Canyon of La Virgin), while learning how it's ancient astronomers followed the cycles of the sun, the moon and Venus. Through the eyes of Dr. Rossana Quiroz -who was part of the excavation team-, we will explore the original pilgrimage route and understand how archaeological spaces, ceramics, burials, carbon dating and DNA, tell a long untold story about the Laja River original people, settlements and landscapes. Tune in with the sky and submerge under the cosmological spell of Mesoamerican sacred entities and philosophical concepts. Also, take into account that the astronomical features of this antique temples and traditions are best understood when explained by the same researcher that actually discovered such features. Pilgrimage to archaeological site.
Pilgrimage to the Hill of the ancestors, the Cañada de la Virgen archaeological site experience. Walk with me through this indigenous sanctuary founded in the VI century A.D. While we walk through this beautiful natural landscape, learn about the 30 centuries old pre-Hispanic native civilizations, their rites, the cult to the ancestors, the archaeological excavations and the research I´m doing about the cultural meanings of the processions performed there. This ancient pyramid was the goal for pilgrims of northern Mexico for a period of 500 years, the people that built it share the same wisdom and knowledge as the famous mayas. -We drive from San Miguel to the Visitor Center of the site. -We hop on the Visitor Center Vehicle that drive us 7 km to the site, -they drop us just at the other side of the canyon that surrounds the sanctuary, -from there we walk, as the ancient pilgrims, through the pre-Hispanic ceremonial road, -we visit the north and the south temple and -we enter to the main complex, - climbing to its pyramid, -we return to the place where the vehicle drop us. -In total, 2 miles walking. -Return to the Visitor Center -We drive back to San Miguel. Other things to note A limited number of visitors enters the site, 55, every hour from 10 to 4 from tue to sun. We need a reservation at least two days in advance, to check the available schedules on the site.

We will take cacao accompanied by singing, drums and guided meditations that will help connect and heal emotions causing energy and emotional blockages as well as connect with our ancestral linen and the wisdom of our ancestors. With flowers we will awaken sensory responsiveness and subtlety, restoring our ability to feel. On this trip to the heart, spaces inside each guest will be opened to communicate lovingly inside and outside in every aspect of our walk through this land. In a magical place on the outskirts of San Miguel de Allende, you'll learn about the home of a traditional healer in Mexico. Similar to a steam bath, in this case with medicinal herbs temazcal leads us to transcend fears, inconvenience, heat and even claustrophobia, to take us on a deep trip of connection with our inner being, making us aware that what we feel little or nothing has to do with the outside, if not the interior, thus creating a deep spiritual connection with our being. You'll learn the properties of Mexican Opal, you'll experience the process to make a silver ring and you'll leave with a unique silver jewel made by yourself! First, we'll explain the mystical properties of the Mexican Opal and you'll select the gem that has the greatest connection with you. Then you'll take the measurement of your finger and you'll cut the silver by yourself using jewelry techniques, you'll solder the ring, you'll forge it by hitting it and once your ring has the required shape, I'll solder the cabochon of your gem and I'll set the stone while I explain each technique step by step.
