We'll start at the new Toyosu—the world's largest fish market. We'll then go to the outer area known as the Tsukiji old market and Tsukiji Uogashi, a new building with fish-selling areas, including a background area that is off-limits to ordinary tourists. We'll drop in for fish while experiencing the authentic and dynamic atmosphere of a wholesale market. After taking some shopping time at the outer area, we'll purchase a variety of fish and head to Asakusa. We'll visit the popular Buddhist Sensō-ji temple before we go to my shop to prepare Kaisekistyle lunch--Traditional Japanese Cuisine--, Kaisen Donburi—sashimi rice bowls—with fresh seafood and more. Tonkotsu ramen soup takes more than 8 hours to make and chicken soup takes at least 4 hours I would say. So we are making “shoyu” (soy sauce) ramen soup in my experience. And, let’s learn more about “Japanese ramen” where is it from originally, how many years it’s been since ramen was landed in Japan, what kind of flavors there, and what are the authentic ramen cooking method at home. So I am excited to share with you my home style Shoyu ramen soup recipe that I have created based on the recipe I have grown up eating! We’ll also make gyoza with lots of cabbage and chives, then pan fried serve bottom side up! Very classic Japanese gyoza ingredients and method of cooking. I will ask everyone to use your hands, chopping, form gyoza, and present the dishes we make. Lots of tips to enjoy Japanese cooking much more, and cooking tools. Mochi and Traditional Sweets Making Class at Private Home
We will start off this experience by learning about cultural aspects about mochi and the traditional sweets. Then we will go on to learning the various sweets: 1. Making mochi (rice cakes) using glutinous rice flour. You will learn how to make strawberry daifuku mochi. 2. Making your own dango (mochi balls on skewers) by mixing water with two kinds of rice flour, sugar and water and coloring it. 3. Making two kinds of seasonal "nerikiri wagashi"—traditional Japanese sweets. We'll start off with the dough making then you will color and shape the dough into a seasonal motif. 4. Finally, you will taste your creations with a bowl of matcha green tea that you will learn how to make. If you cannot finish the sweets you can take them with you in a box. You will be notified if the class if it is a Nerikiri Wagashi Only (Making 3 kinds of Nerikiri Wagashi with Tea Ceremony) Class or a Mochi Only Class (Making 5 kinds of Mochi Dishes) at the time of booking. *Other fruits may be used in case strawberries are not available. I, being Sake Sommelier, will also do Sake-tasting for you with different Sakes in pursue of The One Sake you will love :) In addition, the location we drink is so rich in nature and breathtakingly beautiful so you will get to experience the country side of Tokyo. Sake, Japanese Rice Wine, is very unique Japanese traditional liquor like no other in the world. Now I am a very much of fanatic & enjoy it little more than I should lol. Painting w/ Urushi lacquer&metal powder
"Maki-e" is a Japanese traditional art using urushi lacquer and metal powder. In this experimental class, you will decorate lacquerware using hira-maki-e—a simple technique that can be finished in one day. Even an absolute beginner, who knows nothing at all about makie, can enjoy it. During this class, you can experience real maki-e, using genuine Japanese lacquer and metal powder. You can choose a vessel and a design from various stencils. I'll prepare the tools and materials, so you do not need to bring anything to the class. After tracing the design onto the vessel, you'll draw the design with a brush for maki-e and urushi lacquer, and sprinkle metal powder on top. At the end, I'll pack your work in a box for you to take home. After leaving it overnight, simply wipe off the extra powder to use your vessel. Kintsugi in 1 day
Learn the art of Kintsugi—repairing ceramics using lacquer dusted with precious metals. While it usually takes more than a month to finish a Kintsugi piece, I've developed this lesson so you can participate in this craft in one afternoon. With my guidance, you'll apply lacquer and 24-karat gold powder using the traditional techniques and methods. You'll leave with your own Kintsugi piece as a souvenir of the experience. Other things to note At the end of the session you'll be taking home your own Kintsugi ceramic cup, decorated with 24-karat gold. This is worth about 100 usd or 10,000 JPY.

Paddle to Tokyo Skytree
We will go on a sea kayak journey to Tokyo Skytree, a symbol of the city. At 634 meters (2,080 feet), it's the tallest tower in Japan, and was designed in the image of a big tree stretching up into the blue sky. Our course is going and returning trip of 2.5 hours. On the way, you will see the scenery of the city in harmony with nature—a kingfisher like a blue arrow, a family of ducks floating elegantly, migratory birds by season, jumping fish, and drifting jellyfish. In the oasis of the city, there are a lot of creatures. You will discover the appearance of the new Tokyo. This experience is beginner-friendly, and corresponds to all levels of kayaking. There is very little current, and the waterways are peaceful, so it's suitable for beginners. If you don't have confidence, tandem kayaks are available. A kayak doesn’t rely on motor power, and we will be able to slowly advance with the flow of the city. Other things to note Please contact me if your group is more than 4 people.
