At the arrival I will offer you cofee break, and I will give you a lab coat for the access to the production area. I’ll bring you along a complete tour to discover all the steps of Parmigiano Reggiano’s production. We’ll see where the animals are bred and where the milk is mould. We’ll go into the cheese factory during milk processing and we'll witness in cooking and making cheese wheels. We’ll see then the process of salting and maturing up to enter the huge “caveau”, where thousands of cheeses wheels are guarded and laid out in long rows in the silent maturation rooms and where the scent of cheese will smell so nice and exciting that we won’t be able to resist till the final tasting of cheese and local typical products. Phase 2 preparation of the dough for tortellini and the dough for tagliatelle and tortellini. Phase 3 tasting of wines from the Emilia region. Phase 4 cooking tortellini and tagliatelle, serving and tasting. Phase 5 release notebooks with recipes made in the course. Upon arrival after a brief introduction on the history of Parmigiano Reggiano, I will provide you with everything you need for access to processing (gown, hair cap, shoe covers, gloves). I will take you through a complete path to discover all the phases of the creation of Parmigiano Reggiano. We will enter our dairy during the processing of the milk and we will assist in the cooking and production of the cheese shapes. We will then see the salting and seasoning process up to enter the gigantic vault inside which are kept thousands of cheese shapes stacked on huge shelves as far as the eye can see and where the scent of the cheese will inebriate us until we can not resist arrival of the tasting of cheeses and typical local products. We will also visit the places where animals are raised and where milk is milked. Tortellini with a local Sfoglina
I will host you at Ermellina, my newly opened B&B, located in a charming and characteristic village in the heart of Emilia, the famous Food-Valley. Our "lesson" will start talking about our history, traditional cuisine, and local traditions. Then we’ll have fun kneading flour and eggs in order to make tortellini and tagliatelle, that we’ll cook and eat combined to a wine tasting of different types of Lambrusco (local sparkling red wine). Nonantola (Campazzo) in The province of Modena,(Maranello FERRARI CAR -20 min) about half an hour in the Northwest of Bologna,(DUCATI MOTORBIKE,35 min, LAMBORGHINI CAR 10 min) is the only and exclusive area in the world where Aceto Balsamico Tradizionale di Modena (ABTM D.O.P.) is produced, a traditional Emilian cuisine made with Cooked grape must, naturally fermented and vinegarizated, nothing is added and then aged for at least twelve(12) years or Twenty five (25) and until fifty years or more. You will be immersed in a tasting experience (10 different kinds of aged vinegar) and understanding of the aging process of this Masterpiece of Italian culinary tradition. With our e-bikes, you will discover Fiesole, the sky above Florence, the nature and the Tuscan countryside "so close and yet so far" from the city. In the morning, in the afternoon, at sunrise or sunset, sometimes at night, we will ride at least 30km (18mi), but distance and route may vary depending on the ability of the participants. You will see where Leonardo da Vinci lived and dreamed about human flight, where Dante fell in love with Beatrice. Breathtaking panoramic views of Florence, the hills and countryside surrounded by fields of olive trees. Depending on the season, we will reach a monastery still inhabited by monks at an altitude of over 800m (2600ft), or Michelangelo's childhood home. We'll start off with the cheeky secret hidden in the Fountain of Neptune! Then, I'll tell you all about the biggest church in Bologna, Saint Petronius. After, just a short walk away, we'll go to the Archiginnasio Library, a spectacular demonstration of Italian Architecture. I'll take you to the Anatomical Theater as well; tickets are offered by me! A historical masterpiece, it's where medical students learned Anatomy, directly from the human bodies in front of them! (closed on Sundays) You can't visit Bologna without going to the Two Towers! I'll take you there and let you know the particular story that's behind its construction. After showing you some of my favorite spots, we'll go to Via delle Pescherie Vecchie, and enter into the world Bologna is famous for: food! Situated in the center, this street is filled with restaurants and markets. By now, you'll probably be hungry so I'll recommend the best Italian restaurants! Of course, we can't miss the university district as well, where we'll also head into the ex-Jewish Ghetto of Bologna. Don't forget I'll be your personal photographer as well, and I'll follow your pace the whole time! Here we discover the dark past of post WW2 events and the joyful liberal future of Bologna, we’ll be marching through Via Indipendenza to the cutest secret of Bologna so-called Finestrella, and then we discover student quarters, the University of Bologna, Piazza Verdi and Jewish ghetto. Do you know what else is cool about Bologna? Porticos! And we are going to pass under so many of them. Later on, we discover the story of Le Tre Frecce and Sette chiese. What else? The two towers! Learn how to make homemade pasta easily and successfully. We will meet in Florence at our cooking school located in the historic center, easy to reach, 5 minutes from the Arno river. We are a team of professionals chefs, we are pleased to meet you and let you spend a nice time with us for a fun and unique lesson. We will teach the secrets how to make RAVIOLI, FETTUCCINE or SPAGHETTI & TORTELLI in different shape. We will provide you with the tools useful for the preparation: kitchen gown, rolling pin and pasta cutter, eggs and flour. After the preparation, we will show you all the steps necessary for the preparation of sauces such as "Pommarola" and "Ragù alla bolognese". At the end we will set the table and eat all together the pasta you have made, with 3 different sauces, like a real Italian family. We will be about 12 participants, the experience lasts about 3 hours, It will also be an opportunity to socialize with other travelers and with your host in an Italian atmosphere. To the Countryside to MAKE PIZZA
We will be making high quality Pizza surrounded by nature in the heart of Mugello-Tuscany country side, in a real wood fire pizza oven; an extraordinary experience. We will enjoy a beautiful lunch outside in my garden eating Pizza and tasting local wines. A Pizza Party!!!! Together we will make a pizza dough going through all the steps and I will show you all my secrets to have it perfect! The pizza dough that we are going to eat I'll make minimum 24 hours ahead the experience, so we can have a very digestible and good pizza!! I truly believe in the farm to table concept, all the ingredients that we are going to use for the dough and the toppings are either from my garden or very locally sourced. Just an example the passata for the topping comes from the tomatoes growing in my garden and the mozzarella from a local farm called il forteto!!!!but there will be many many more toppings!!!! Other things to note This amazing experience is taking place in my home in the country side in the middle of the nature, the road to get up here is quaint, rustic and you find a part of gravel road as well!! For those without transport, you can easily get the train from Florence (Santa Maria Novella) to Dicomano and then I'll pick you up.

Starting from the medieval Market, where you can find all the typical products of Bologna, I will introduce you to all the traditional cheeses that our beautiful region could offer, beginning with the king, his majesty Parmigiano Reggiano. You can learn how it's made and how many different kinds you can find, depending on the cow breeds. We will talk about Grana Padano and why it's so different from Parmigiano, we will discover Pecorino di fossa and squacquerone, typical cheeses of Romagna. Modenesi da generazioni siamo cresciuti guardando la nonna che preparava in casa ogni tipo di pasta dai tortellini alle lasagne passando per le tagliatelle. Da guardare adesso siamo passati a preparare noi stessi questi piatti della tradizione! Verrete accolti con un aperitivo di benvenuto, dove già inizierete il vostro viaggio sensoriale per l'Emilia Romagna, chiudendo gli occhi sentiterete già i profumi e gli aromi del lambrusco di Sorbara, del grasparossa di Castelvetro e del pignoletto. A questo punto siamo pronti per iniziare, armati di grembiule e mattarello inizieremo a raccontarvi e ad insegnarvi come fare la pasta fresca, tortellini, tortelloni, tagliatelle e lasagne. Finalmente poi mangeremo insieme quello che avremo fatto con le nostre mani, e potrete gustarvi fino all'ultimo tortellino! Ma non finisce qua il pranzo! Welcome from Chef Dennis in one of the first and most recommended Home Food Class in town! Feel like home in our real Bolognese house in the very center of Bologna, 7 minutes walking from the main square. In our cozy and 100% safe environment, we'll feel how Pasta is an experience of Love and Tradition, made with the Fresh ingredients our Italian Mum would choose for us on a Sunday Morning :) I Promise it to you as I did to all the 3300+ happy people who took this class (*ALWAYS* write me before booking here) Starting from scratch, YOU'll make the dough manually, I'll tell you how to play with it and we'll make our own meal through - both - a traditional and a creative process. While YOU'll create all the different fillings, the proper sauce(and a surprise one, made right at the moment!). Then we'll have a break to taste 5+ different kind of cheeses and local aged ham. Guided and unlimited tasting it's necessary to learn a way to get a proper result that you will be happy to replicate back home. In this cooking class you'lI learn how to make filled and traditional pasta: Tortelloni, Tortellini, Ravioli, Agnolotti, Tagliatelle and Garganelli. So far just 3 classes finished to eat all of them. It's not a challange, but.... A complete and "easy to reply back home" pasta class that wouldn't let you get lost in 1000 different superficials recipes :)
